This 1-Day class is jam packed with decades of experience. Your expert instructors will teach everything you need to know to get your large game animal into the freezer. Will, owner of the Piked Antler will walk you every step of the way teaching you how to skin and quarter a deer. Our expert butcher and survival instructor, Kenny, will teach you about different cuts of meat, how to cut them, how to cut jerky and more. Will and Kenny will team up at the end to teach you how to vacuum seal and preserve venison.
You will also go go home with 2-5 pounds of quality aged venison.

How to Skin a deer
"There’s more than one way to skin a cat."
Well that applies to deer as well. Let us show you how we skin large game. We use our hides for clothing and tools, so let us show you how to skin a deer and preserve the beautiful hide.
Bring your “field knife” so that you may get a feel of how the process would go if you only had your field knife. We will have specialty knives and tools for you to use as well.
We will have several warm fires going upon your arrival to keep you warm.
Cold blood on a cold day on your hands is no fun.

Quartering
Quartering is all about where to cut and how to cut. This involves removing the 4 quarters (4 legs/2legs and 2 arms).
You’ll also learn how to precisely and delicately remove what is praised by nearly all hunters as the best part of the animal for food, Back straps.

Butchering
Our 13 year pro butcher will be with you ever step of the way teaching you how to cut numerous different cuts of meat. Top Sirloin, Sirloin Tip, Bottom Round, Eye Of Round, Bone out Shank, Top Round and many more cuts will be taught.

The Treats
The Treats are jerky and sausage making. You will also learn how to make and mix jerky seasoning as well as how to cut jerky. You’ll go home with over a pound of jerky ready for your dehydrator.
You’ll also make and mix sausage seasoning and go home with vacuum sealed sausage for cooking up later.

Vacuum Seal
Now that you have pounds of venison to take home with you, you’ll need to know how to vacuum seal it for the freezer.
Surprisingly, there are many tips and tricks to this. We will teach you how to organize, vacuum seal and label all your venison so you can store it in your freezer knowing you can grab whatever cuts you want, when you want, hassle free.

Preserving meat is such an important skill. Preservation of meat can be applied in a survival situation, or for situations in which power may be lost for several days.
